Bad to the Bone Barbecue was started in 2003 by the father and son team of Mack and Brian Cobbs. For many years, they cooked BBQ roadside with two old 55 gallon drums for church functions. BBQ was always a significant part of Mack’s southern roots and he passed that same interest on to his son. All throughout Brian’s high school years, BBQ was a big part of his life. He spent hours over many weekends with his father Mack cooking over those same 55 gallon drums. When Brian went off to college at Syracuse University, he never lost his passion for cooking BBQ. He would make the 60 mile drive from Syracuse to Williamson, NY to continue the tradition with his father. After graduating from college in 1999, Brian worked in Rochester. One day while sitting at his desk, Brian had a vision of opening an authentic BBQ joint in Wayne County, NY. With the help of his wife and father, the long journey to opening Bad to the Bone Barbecue began. From the point when they opened their doors in December 2003, the business has steadily grown as they continue to “spread the gospel of Barbecue”.
